The most exciting revitalization project in Christiansted town in recent years is almost ready and of course, Blue Sky was involved! USVI Culinary Ambassador, Chef Digby Stridiron, talks about balter, an upcoming restaurant on the corner of Company Street and Queen Cross Street in the heart of Christiansted town. Blue Sky sold the property in 2014. Stephanie had the opportunity to sample a few of Chef Digby’s creations at one of St. Croix’s premier culinary events. She was so impressed that she sold her client on the idea of transforming the blighted property into a restaurant with Digby as executive chef. The building is more than 250 years old. The restaurant will feature meals prepared using local ingredients.
